Creamy pear, snow eggs and almonds

Ingredients
- 4 large Comice pears
- 2 egg whites
- 2 teaspoons of caster sugar
- 5cl of whipping cream
- 1‐2 teaspoons of almond syrup
- Juice of 1lemon
- Toasted flaked almonds
- Caramel for drizzling
Preparation
Peel the 4 pears
Chop 3 pears into dice, and squeeze the lemon juice over.
Place in a saucepan, cover with water and bring to the boil, cook for 10 minutes.
Drain the pears and put in a blender with the whipping cream and some almond syrup, place in the fridge.
Whisk the egg whites and add the sugar.
Place in a bowl and cook in the microwave for about thirty seconds.
To serve
Put the pear coulis in some coffee cups. Spoon on top some snow eggs, and decorate with thin slices of pear, toasted flaked almonds and a drizzle of caramel
