Tiramisu with Novablue apples and salted butter caramel

Ingredients
- 4 Novablue apples
- 4 french crêpes dentelles
- 40 g of salted butter
- lemon
FOR THE TIRAMISU
- 3 eggs
- 30 g of sugar
- 125 g of mascarpone
FOR THE SALTED BUTTER CARAMEL
- 100 g of sugar
- 100 g of salted butter
- 1 tablespoon of double cream
PREPARATION
PREPARATION OF THE CARAMEL AND APPLES
Pour the sugar in a pan, add some water and cook without stirring until you get a golden caramel.
Out of the heat, add carefully the butter and the double cream.
Reserve.
Cut the apples in pieces and squeeze lemon on it. Keep some pieces of apple for decoration.
In a frying pan heat a little of salted butter, add the apples and cook during 2 minutes.
PREPARATION OF THE TIRAMISU
Separate egg whites from yolks.
Mix the yolks, add sugar and mascarpone. Whip for a homogeneous mixture.
Take up whites eggs in firm snow and incorporate them little by little in the mascarpone mixture to obtain a frothy mixture.
PRESENTATION
Crumble the French “crêpes dentelles” in the bottom of 4 glasses “verrines”. Add the apples fried in butter.
Top it with the caramel sauce and place the glasses “verrines” in the refrigerator.
Just before serving, garnish the verrines with Novablue slices and sprinkle with French “crêpes dentelles”.
